Butterscotch confetti bars, or peanut butter marshmallow squares, are made with only 4 ingredients. This has got to be the easiest no bake dessert yet! With the peanut butter, butter, colored marshmallows (in 4 fruity flavours) and butterscotch chips, this is such an easy dessert to make. This peanut butter dessert seriously takes only 15 minutes from start to finish!

This is another tasty dessert which I had never experienced until we visited my husbands parents. My beloved mother in law would serve these butterscotch confetti bars along with many other delicious treats. I only learned a few years ago that this easy dessert is one of my husbands absolute favorites!

For this quick, easy dessert, I use natural crunchy peanut butter. The crunch from the peanut pieces is such a great texture addition. Of course, smooth peanut butter is great too. I always use salted butter in this recipe. Really, this easy dessert recipe always tastes amazingly yum! One mistake that I have made is to mix the marshmallows in too soon, before the peanut butter mixture cools enough…still tastes great but the marshmallows start to melt and don’t look as pretty:-)

Butterscotch Chip Shortage…

Last Christmas I had Butterscotch Confetti Bars on my list of about 40 treats to make. Fortunately, I had 1 bag of butterscotch chips in the cupboard. I was able to make 1 small batch, but, of course I wanted 80, not only 40 squares in the freezer! I searched every single grocery store that I could here in Calgary and could NOT find butterscotch chips! I’m still not sure why there was this butterscotch chip shortage, but, now I keep a bag in the cupboard at all times!

These peanut butter and marshmallow squares freeze very well. I have had them keep up to 4 months in a sealed container in the freezer. (As long as the container is hidden well)

Ingredients

  • Butter, salted works fine in this recipe.
  • Peanut butter, any brand will do, crunchy or smooth is fine.
  • Butterscotch chips
  • Small colored marshmallows, four fun fruity flavours!

How to Make Butterscotch Confetti Bars

1. Line a 9×13 inch pan with parchment paper.

2.Melt the butter and peanut butter in a medium saucepan on low heat.

3.Add the butterscotch chips and stir until melted.

4.When the pot has cooled enough that you can hold your hand on the bottom of the pan, add the marshmallows.

5.Pack the marshmallow mixture into the prepared 9×13 inch pan. Use a spatula to press down firmly.

6.Chill in the refrigerator for about 1 hour, until firm. Transfer to a cutting board and cut up.
