Creamy cucumber and dill salad is a simple, delicious, summery salad recipe! With fresh dill, and thinly sliced sweet white onions, nothing says fresh and simple quite like this cucumber salad.

Growing up, my family always grew large gardens. Therefore, there were always an abundance of cucumbers throughout the summer. Of course, now I make this salad year round using English cucumbers. For the fresh dill, I buy lots in the summer, then freeze it to have in the winter. This way, I can make this creamy dill dressing for cucumber salad at any time of the year.

For creamy cucumber and dill salad, you simply slice the cucumbers and onion thinly, either by hand or with a mandolin slicer. Then toss the ingredients into a bowl, mix, and combine the cucumbers and onion. It is best served right away, as the longer it sits, the more watery the dressing becomes. I do find that using a mixture of sour cream and mayonnaise will provide a thicker dressing than just using sour cream. Also adding salt to the dressing will generate more weepiness.

What type of Cucumbers are best for Creamy Cucumber salad?

I actually prefer garden cucumbers that have been freshly harvested! There is no comparison in flavor, if you have a sweet garden variety! YUM!

Do not use cucumbers that have grown too large, as often they will be bitter with tough skins. If I’m craving creamy cucumber salad recipe in the winter, I use English cucumbers. These cucumbers don’t require peeling and the seeds are small so you save yourself some work of scooping out the seeds!

And Onions?

The best onions for this salad recipe are sweet white onions. These are the white onions with the papery skin. Yellow onions are way too strong! Purple onions can be used but you may want to use less, as the flavor could overpower the delicate cucumber and dill flavors. I have also used green onions in a pinch.

History of Creamy Cucumber and Dill Salad

Many people will remember growing up with some form of cucumber salad! I know my mom and grandma were Canadian and this is where I learned of cucumber salad with dill. Mizeria is a Polish cucumber salad that has roots traced back to the 16th century. This was a simple salad of sliced cucumbers in sour cream with dill. Then there is Gurkensalat, the German version which can have either a vinegar based or creamy dressing. Cucumbers originated in India and now are grown throughout the world.

  • Purple onions can be used, although they have a stronger flavor.
  • For a milder onion flavor, use green onions or chives.
  • You can use lemon juice or apple cider vinegar instead of the white vinegar.
  • Add a bit of cayenne for a slight bite.
  • Of course you can use garden cucumbers if you have them. If the skin is tough, peel the garden cucumbers and if they are quite seedy, scoop the seeds out.

  • Cucumbers, of course! Sweet garden, or English cucumbers, sliced thinly.
  • Onion, the sweet white onions with the papery skin are the best!
  • Sour cream, you can use light or regular sour cream. You can substitute yogurt for the sour cream.
  • Mayonnaise
  • Dill, fresh is best, but dry can be used if it’s winter and there is no fresh dill to be found. Just use less, about 2 tsp.
  • Vinegar, I use white vinegar, or you can use apple cider vinegar or lemon juice.
  • Sugar, this will offset the vinegar. You can adjust to taste before adding the cucumbers and onions to the dressing.
  • Salt, only if you like it, and taste before adding any.

    • Serve right away if possible, the longer this cucumber salad sits, the weepier it gets.
    • To make ahead, you can make up the dressing ahead and have the cucumber and onion sliced. Just keep the dressing separate from the cucumbers and onions until right before you serve it.
    • Fresh dill really does give the best flavor. If you don't have any, you can use dry, but just use 2 tsp of the dry.
    • Buy lots of dill in the summer and freeze it already chopped for year round use!

    This simple salad is best eaten right away. If you do have leftovers, they will keep for up to 3 days in the refrigerator. The dressing will become watery so you may have to drain the cucumbers before serving the leftovers.

    Should I peel the cucumbers before making this cucumber salad recipe?

    If you use English cucumbers or small garden cucumbers, there is no need to peel them. If the skin is tough, like on large garden cucumbers, then, yes, by all means, peel the cucumbers.

    Do I have to scoop out the cucumber seeds before making cucumber salad?

    If you are using a large garden cucumber or any variety with large seeds, then, yes, scoop them out. For English cucumbers or small garden cucumbers, there is no need to scoop out the seeds.

    Is there any way to prevent my cucumber salad from becoming weepy?

    You can try sprinkling salt on the sliced cucumbers and letting them sit for about 30 minutes before draining the water. Pat the cucumbers dry with paper towel, then mix the salad together. The salt will draw out some of the moisture so that the cucumbers don't become quite as weepy.

    Sure, just swap the sour cream for mayonnaise or another creamy dairy free alternative.
