Cinnamon Roll Cookies are super simple to make. Rolling the soft dough out, then spreading the butter and cinnamon sugar is definitely not complex. But, do make sure the dough sticks together well. Not overworking the cookie dough is very important and chilling the cinnamon roll dough is also vital. This step ensures a round cookie and easier slicing!

I usually make Cinnamon Roll Cookies without icing. They are SO tasty and the cinnamon really shines through! These cinnamon cookies are not very sweet. so, to really sweeten them up and make them extra special, you can make a simple vanilla glaze to drizzle on the top! Cinnamon Roll Cookies can be made ahead of time and frozen, either cooked or uncooked. The cookie dough can be frozen once it has been rolled into a log, until you are ready to slice and bake your cinnamon cookies. Or, you can bake the cinnamon roll cookies, once the dough has chilled for at least 2 hours. Then, freeze the finished cookies in a sealed container for up to 4 months!

The first time I tried Cinnamon Roll Cookies was at my in-laws in Ontario. This was a cookie we could always count on being served there. I very distinctly remember one year when my youngest was only 3. Cinnamon roll cookies were his favorite snack at his Nanny and Poppy's house. Now, my 2 year old grandson is falling in love with this sweet, crisp, cinnamon cookie! ❤ This recipe is my mother-in-law's recipe. I usually make this cinnamon icebox cookie every Christmas. Of course, these cinnamon cookies are great any time of the year!

Ingredients

  • All Purpose Flour
  • Sugar, white for the dough, then either white or brown sugar for the filling.
  • Butter, some for the dough, and more butter melted for the filling of the cinnamon roll cookies. Use salted!
  • Baking powder
  • Egg, only one is needed.
  • Water, enough to get the dough soft and workable.
  • Cinnamon...of course 🥰

How to Make Cinnamon Roll cookies

1.Mix the flour, 1/2 cup sugar, 1/2 cup softened butter, baking powder, egg and water until a soft dough forms. Stop mixing as soon as the dough is pliable and soft, try not to overmix.

2. On a lightly floured surface, roll the dough into a thin rectangle. Add more flour to your surface if it starts to stick.

3. Spread with melted butter.

4. Sprinkle the cinnamon and sugar evenly on the melted butter.

5. Roll up into a long log and wrap in plastic wrap. It's okay if the edges aren't perfect. When you slice the cookies thinly and bake them, they will all turn out fine!

6. Place on a baking sheet to keep straight and chill in the freezer for at least 2 hours. Next, cut into thin slices and place on a parchment lined baking sheet.

7. Bake at 375°F for 10-15 minutes, until slightly browning on the edges.

If you want a softer cookie, just cut the slices thicker.
