Sweet and Chewy Toffee Cookies are made with skor bits. This cookie tastes like a candy! With only 7g of Carbs though, it's actually less sugary than a lot of candies.
This recipe for Sweet and Chewy Toffee Cookies is a favorite of "sweet tooths" in our family. The cookies are very thin and chewy when baked. The caramelly toffee flavor is very evident in these cookies. With just a simple cookie background including vanilla there is nothing to subtract from the toffee flavor!
History of Sweet and Chewy Toffee Cookies
I developed this recipe because I LOVE Skor bits! Honestly, I would just eat them plain. This recipe keeps me from eating a bag of Skor bits because I quickly make them into cookies. I still LOVE these cookies, but they are more filling than just plain Skor bits. Therefore I can't eat as many...

Method for making Sweet and Chewy Toffee Cookies
You basically mix these Sweet andChewy Toffee Cookies the same as most cookie recipes. First, cream the butter and sugars together. Then, mix the eggs in one at a time and the vanilla. Next, add all of the dry ingredients and mix well. You then place small spoonfulls onto the parchment covered cookie sheet. These cookies only take 7-9 minutes to bake in 350°F. I always bake using the convection mode so if you don't use convection you may need to add a bit of time. You do need to bake these on parchment paper, otherwise the toffee will stick when it melts.
