This recipe was first introduced to me by my sister in law. After trying these delicious squares once, I had to have the recipe! Now, after many years of making peanut butter cheerio squares, my original messily scribbled recipe on scrap paper is almost worn out! (by the way it was my messy scribbling as I got the recipe over the phone, my sister in law has very neat writing!!) The directions are just jotted down in a few indecipherable scribbles. You would think I was just rushing to get this recipe written as fast as possible so that I could go make some! Anyways, it's time to get this recipe properly printed out...

The base of these delicious cheerio marshmallow squares is honey nut cheerios. Honestly, honey nut cheerios are definitely the flavor favorite of cheerios around here! If you do use original Cheerios, just add some honey, or, if you don't like them so sweet, don't add honey. This cheerio bars recipe is extremely versatile, so switch it up with whatever ingredients you have in your pantry.

Honey nut cheerios were first introduced in 1979. They were a brainchild of Yandel Gonzalez, who was in the General Mills company. Original honey nut cheerios were first made with actual nuts. Ingredients for Peanut Butter Cheerio Bars

  • Butter, I use salted and it tastes great!
  • Peanut butter, I always use natural peanut butter, either smooth or chunky, just whatever I have in the cupboard.
  • Miniature marshmallows, which melt better than large marshmallows.
  • Vanilla extract, just mixed into the melted-marshmallow-peanut-butter-goo part.
  • Honey nut cheerios, the star of the show!
  • Chocolate chips, I use semi sweet, just sprinkled on top, melted, and spread. Yum!

How to Make Peanut Butter Cheerio Bars

1.In a large saucepan, melt the first 3 ingredients over medium-low heat, stirring often. Once melted, add the vanilla and stir.

2.Add the cheerios and stir to combine.

Mixing the honey nut cheerios in with the melted ingredients.

3.Pour into a greased or parchment lined 9x13 inch pan and press down with a spatula.

4.Immediately sprinkle the chocolate chips on top. Let it sit for about 5 minutes to soften the chocolate chips, then spread them out with a spatula or knife. (I actually pop it into a 350°F oven for a couple of minutes to ensure melting.

5.Let cool for at least two hours at room temperature or 20 minutes in the refrigerator. Remove from the pan and cut into squares.

Variations

  • Try with any other Cheerio brand or flavor.
  • If you don't like peanut butter, use any other nut butter.
  • For the chocolate chips, you could use dark chocolate, milk chocolate, or white chocolate chips.

How to Store

Place the cut up peanut butter cheerio bars in a sealed bag or container.

They will keep for up to 5 days on the counter, or, pop into the freezer to keep for up to 3 months.

Note

Pop the squares into a 350°F oven after sprinkling the chocolate chips. Leave for 2-3 minutes, then the chocolate will be really easy to spread.

Using parchment paper instead of greasing the pan will make removal even easier.

Make sure to stir while melting the marshmallows, butter, and peanut butter so that the bottom doesn't scorch.
