With a mild bite from the ginger, counteracted with the sweet and tasty cinnamon, ginger, and clove, this makes for a truly tasty ginger snap variation.

Why I Crazily Bake 20 Cookies and Desserts at Christmas

The other evening when I mentioned that I'm going to start in on my Christmas baking, a few voices piped up. Some said, "Just make one cookie at a time, then, when we finish that kind make another."

One child said, "As long as you make Peppermint Pats."

Another said, "As long as you make Fattigman."

Then, there's the child who adores Shortbread, and my husband who loves Snowballs the way his mother used to make.

The reason I usually start with candied ginger cookies and other icebox cookies is that they are the easiest recipes to make. Plus, if I don't have time to bake them right then, I just pop the cookie dough rolls in the freezer to bake later.😉

Okay, so our family will hardly eat ANY cookies on Christmas day. (At least it seems like that.)The turkey dinner and chocolates are so filling. So, why do I bake so many cookies and desserts? I'll tell you why...because I love to have tasty treats handy when friends and family come over! Cookies are also great gifts to give to family, friends and neighbors!

What is Candied Ginger?

Candied ginger, or crystallized ginger is a form of preserved ginger. It has been dried and soaked in sugar, in different orders depending on whether it is candied or crystallized. Candied ginger can be a somewhat healthy snack, eaten in moderation. It also helps with digestion, so may be a great choice of dessert after a big meal.

My grandma always made candied ginger icebox cookies as part of her Christmas cookie line up. She would always have an ice cream pail full of these incredible ginger cookies in her freezer. These ginger icebox cookies are so easy to eat frozen, right out of the freezer!😉🤗 And, if they are too hard, just dip your cookie in a glass of milk! (This recipe is not my grandma's, but they taste just the same as her cookie recipe.)

Slice and bake cookies, or icebox cookies are the easiest and best cookies recipes, for Christmas or any time of the year! You can make up the cookie dough and roll it into logs. Then, wrap and freeze until you want to bake your icebox cookies. Christmas cookies do not have to be hard or complicated, especially if you include some slice and bake cookies to your line up of Christmas cookies recipes.

The BEST cookies recipes are the ones that your family will eat! My family has many favorite cookies, and some are special Christmas cookie recipes. They always tell me to bake the Christmas cookies throughout the year, but, for some reason, candied ginger icebox cookies are one of those recipes that I mostly make for Christmas. Granted, this recipe does make a LOT of ginger cookies and they do keep very well in the freezer. So, we usually have Christmas cookies to eat for about 3 months...

Ingredients for Candied Ginger Icebox Cookies

  • Butter, as usual, I use salted. Margarine will also work for this recipe.
  • Granulated sugar, the only sugar in this cookie recipe. White sugar creates a crispier cookie.
  • Egg, only one is needed.
  • Corn syrup, also aids in crispiness.
  • Baking soda, dissolved in warm water.
  • All purpose flour
  • Ginger, cinnamon, and cloves, the spices for this ginger icebox cookie.
  • Candied ginger, you can use more or less than one cup if you prefer a milder or stronger ginger flavor.

How to Make Candied Ginger Icebox Cookies

1. Cream the butter and sugar together in a medium bowl.

2. Beat in the egg and corn syrup.

3. Dissolve the baking soda in the warm water, then add it to the butter/sugar mixture.

4. Add remaining ingredients and mix well.

5. Shape into rolls with about a 2" diameter. Wrap with plastic wrap and chill in the freezer for at least 2 hours.

6. Slice thinly and place on a parchment covered baking sheet.

7. Bake at 400°F for 6-9 minutes.
