Thankfully, we have kind and generous neighbors and family who have apple trees in their yards! These are quite tart and have an extremely appley taste. Of course, any tart and firm apple will work for this muffin recipe.

You will love these apple muffins for a quick, on the go breakfast. It’s so easy to bake up a double batch of Apple Streusel Muffins and have them in the freezer for busy mornings. So often, when my children were little and we had a busy day, our best breakfast, on the go, would be apple cinnamon muffins and cheese strings!
Freezing Tip
- Once the muffins have completely cooled, place in a sealed bag or container. They will keep for up to 3 months.
- When you want to thaw the apple streusel muffins, open the bag or container on the counter. This way the streusel won’t be soggy.

Baking tip I Learned About Muffins
I learned the best way to bake muffins! This method guarantees a high muffin top. It seems so hard to believe, but first you bake the muffins at a high, like, 425°F, temperature, then lower the temperature. Also, bake on the top half of the oven and do not open the door until the apple muffins are finished. This method makes a beautiful poofy top on the muffins! Trust me on this, I was leery to try this the first time too. But, it works!!

Apple Streusel Muffins Ingredients
- Apples, use a firm, tart apple. I actually use the homegrown apples from trees here in Alberta. They are SO flavorful to use in these muffins and Caramel Apple Cake. Do take the time to peel your apples so that you don’t get tough peel pieces in your apple muffins.
- Cooking oil, milk, egg, vanilla, the other liquid ingredients.
- Dry ingredients are flour, sugar, baking powder, salt, and of course cinnamon.
- The topping consists of brown sugar, flour, butter, and cinnamon.
How to Make Apple Streusel Muffins
1.In a small bowl, use a fork to mix the brown sugar, 1/4 cup flour, 1/4 cup cold butter, and 1/4 tsp. cinnamon until crumbly.
2.Beat the egg, milk and cooking oil together in a large bowl.
3.Stir in the apples.
4.Add all of the dry ingredients to the wet ingredients. Stir gently only to combine:-)
5.In a greased muffin tin, fill each muffin cup about 3/4 of the way full. Sprinkle the crumbly streusel topping on.
6.Preheat the oven to 425°F. Place the muffin tin in the upper part of your oven. Bake for 6 minutes, then lower the temperature to 350°F (Do not open the oven door) and bake for another 7-9 minutes, until a toothpick inserted in comes out clean. Remove as soon as you can, in about 5 minutes, to a wire cooling rack.
why use oil instead of butter in apple streusel muffins?
Have you noticed that a lot of muffin recipes call for oil instead of butter? Although I usually prefer butter in almost everything, there is actually a really good reason to use cooking oil when baking apple cinnamon muffins or any other muffin recipe! The oil will keep your finished muffin moist!!! The oil essentially traps the gases which are released from the baking soda or powder and slows down gluten formation. This will ensure the best muffin recipe ever!

Note
To freeze, place the completely cooled muffins in a sealed bag or container and freeze. Then, when thawing, leave the bag or container open.
Use cold butter for the streusel.
Don't overmix the batter, just mix until combined for the fluffiest muffins.
