This Strawberry Spinach Salad is extremely simple and quick to put together. The dressing is just sugar sprinkled on sliced strawberries to bring out the juices. With toasted cashews and feta or mozzarella cheese, this spinach salad is true simplicity and terrifically tasty!

My husband is sensitive to any dressings with vinegar in them, so I kept this salad super simple. The sugar sprinkled on the strawberries draws the juices out, creating a slightly sweet, very strawberry flavored dressing. With the toasted crunchy cashews and the slightly salty mozzarella cheese, this salad has such a well balanced taste and texture combination.

Spinach is such a healthy food, it can almost be called a superfood. It is super high in antioxidants, vitamins, and minerals. Ingredients for Strawberry Spinach Salad

  • Spinach, I always buy the prewashed baby spinach to have it ready to use.
  • Strawberries, fresh is best but frozen also will work if you don't happen to have fresh.
  • Sugar, just 2 Tbsp to sprinkle on the sliced strawberries.
  • Cashews, toasted tastes the best, and if you prefer more salt, use the salted ones.
  • Mozzarella cheese, cut in cubes or grated.

How to make Strawberry Spinach Salad

1.Slice the strawberries and sprinkle the sugar on them. Stir them to coat so the juices will be drawn out.

Sliced strawberries with granulated sugar.

2.Cut the mozzarella in small cubes, or if you prefer, grate it.

Mozzarella cheese cubes in a glass bowl.

3. Assemble the salad right before you are ready to eat it, by placing the spinach in the bowl first, then the other ingredients in any order.

  • Some other fruit that is great with spinach salad are mandarin oranges, apples, peaches, or grapes.
  • Some people like to add some red onion to their spinach salad.
  • Red bell peppers are also great in this salad.

Ingredients
  • 2 cup strawberries (sliced)
  • 2 tbsp granulated sugar
  • 1 cup mozzarella cheese (cubed)
  • 6 cup spinach
  • 1/2 cup cashews
Instructions
  1. Sliced strawberries with granulated sugar.

    In a small bowl, sprinkle the strawberries with the sugar. Stir until coated.

  2. Mozzarella cheese cubes in a glass bowl.

    Cut the mozzarella cheese into small cubes, or grate it if you prefer.

  3. Strawberry Spinach Salad

    Assemble the salad right before serving. Start with the spinach, then add the other ingredients.
