You can make this recipe for leftover turkey with or without the mashed potatoes. And the veggies can totally be swapped for whatever you have on hand. For the gravy part, you can use mushroom soup and sour cream if you don’t have any leftover gravy. Sometimes I use the sour cream along with the gravy and mushroom soup for extra creaminess.

This turkey casserole recipe is an adaptation of a truly delicious leftover turkey and chicken casserole recipe. I first learned this recipe from my husband’s aunt Marion. She had a different version which included only green onions, and green and red peppers as the veggies in this casserole recipe. My husband doesn’t care for the peppers in this version so I started using the frozen mixed veggies. Aunt Marion also didn’t use mashed potatoes or gravy in her recipe but that was just born of a necessity to use up some leftover mashed potatoes…

Thaw the casserole overnight in the refrigerator before reheating.

- Condensed mushrooom soup, any brand will do, but I do prefer the Campbells brand. If you prefer another creamy condensed soup, use that.
- Gravy, I use about 1 cup, give or take a bit depending on how much I have left over. You can also use store bought gravy.
- Green onions, chopped finely
- Frozen mixed vegetables, adding the veggies will make this easy casserole recipe into a one dish meal!
- Turkey, cooked and chopped. Or use leftover chicken but always make sure it is cooked.

- Slow cooker stuffing, or cheat and use 2 boxes of prepared stovetop stuffing.
