There is nothing Impossible about this pie! This custard-like, creamy, yummy, coconut pie is the easiest dessert to make. For the Impossible Pie recipe, just blend all the ingredients then pour into a greased pie pan. It almost magically forms crust and custard layers when baking.
This is the first recipe I learned to bake. My grandma gave me this recipe and would let me bake impossible Pie when I would visit her. I was probably 10 years old the first time I baked it. At that time, it was such a treat. I felt so "grown up". Just to be able to blend the ingredients, and have it turn into this magnificent pie when it comes out of the oven is almost alchemy!
History of Impossible Pie
The name comes from the fact that it should be impossible to make a pie with this simple method! Although no one knows for sure when this super easy, delicious pie was invented, the earliest mention of it in a cookbook was in the 1960's in America. Because of the coconut in this pie, it is assumed that it was developed in the Southern U.S. where coconut pies were popular. Bisquick printed a recipe for Impossible Pie on their boxes in the 1970's. This achieved popularity for the pie and it remained popular into the 1980's. I'm sure if more people would try this super easy dessert, it would once again gain in popularity!
Ingredients for Impossible Pie
- Milk
- Coconut:Shredded
- Eggs
- Vanilla Extract
- Flour
- Butter
- Sugar
- Nutmeg
Method for Preparing
- Grease a pie pan.
- Place all of the ingredients in a blender.
- Mix well.
- Pour the mixture into the greased pie pan.
- Bake at 350°F for 45 minutes.
- Serve warm or cold. If it is warm, the custard part will be very soft and will fall apart a bit like my pie did for the picture.
Serving Suggestions
Serve with your favorite ice cream or whipped cream.
Drizzle caramel or chocolate sauce on it.
Serve with fresh strawberries or other favorite fruit.
Serve with coffee or tea.
