This easy soup recipe has a perfect pairing of beef broth with tomatoes and tomato soup as the base. You can also add cooked barley to make this soup a little more hearty than it already is.

What can be more comforting than a hot bowl of delicious, nourishing soup on a cold day? Our family has a lot of favorite soups with hamburger soup truly being close to the top of the list. I always found soup a good way to get my children to eat veggies when they were younger. Now, homemade soup is just a well-loved comfort food in our house.
For this recipe of hamburger soup, I grate the carrots and potatoes. I use my food processor, which makes this a quick and easy task. Grating the carrots and potatoes causes this soup to cook up super fast! Of course, the longer you simmer it the tastier it gets. Hamburger soup is even better warmed up the next day, so, you may want to make a double batch.

Ingredients in Homemade Hamburger Soup
- Ground beef, use as lean as you can find, to avoid having to drain the fat.
- Water and beef bouillon, or already prepared beef broth.
- Canned tomatoes, I use diced and mash them, but not mashing is fine too.
- Tomato soup, to thicken and richen the broth.
- Carrots and Potatoes, grated, celery and onion chopped, the main veggies in hamburger soup.
- Parsley flakes, salt, pepper, and thyme
- Sugar, which cuts the acid of the tomatoes and acts as a flavor enhancer.
How to Make Homemade Hamburger Soup
1. Scramble fry the ground beef and set aside (drain the fat if needed).
2. Place the water, bouillon, tomatoes, tomato soup, carrots, potatoes, celery, and onions in a large saucepan over medium high heat. Bring to a boil.
3. Add the sugar and spices.
4. Reduce heat and simmer for 30-45 minutes, until the veggies are tender. (the longer the better)
5. Add the ground beef and stir.
6. Serve with your choice of bread on the side:-)

Variations
- Add some cooked barley.
- Can add cooked pasta right before serving.
- Use other veggies, such as peas, beans, corn, grated zucchini, cabbage…
- Can add chopped garlic with the onions and celery.
- Grated cheddar or parmesan cheese sprinkled on top!
- Try other ground meat, such as ground turkey, bison, sausage, or chicken.

Note
Use lean ground beef so you don't have to drain the fat.
If you do use higher fat beef, drain the fat after browning.
You don't have to peel the potatoes before grating, the peel adds extra flavor and nutrition.
