History of French Onion Soup

The french onion soup recipe that we now know was introduced in the 18th Century in Paris, France. There are two different theories as to who actually invented this simple but scrumptious soup. One theory says that King Louis XV was hungry late at night while at his hunting lodge. All he could find in the pantry were onions, butter, and champagne. The other theory is that Stanislas Leszczynski tasted onion soup at a Champagne Inn and later made this soup famous at the Palace of Versailles. In the U.S. French Onion Soup was introduced by Henri Mouquin in 1861 at a New York restaurant.

Note
  • Take your time and don't rush this recipe, it really does taste better with caramelizing the onions and simmering the soup.
  • The longer this soup simmers, the richer and fuller the flavor will be.
  • Can use different cheeses such as gruyere, or just mozzarella, depending on your preferences.
  • If you don't have soup crocks that are safe for the oven, you can make the cheese toast seperately and just place on top of the soup.
  • The sugar speeds up the whole caramelizing step.
