But then, I discovered how easy and quick it is to make delicious fried rice, so I make this healthy scrumptious meal often! With any kind of meat, rice and frozen vegetables, this is a complete meal, which takes only 15 minutes to make!
Easy Pork Fried Rice is an extremely adaptable recipe. I use ground pork, but you can use leftover meat or no meat at all, and mix and match the vegetables according to what you have in the refrigerator.

How to Store Easy Pork Fried Rice
Easy Pork Fried Rice will keep for up to 1 week in the refrigerator in a sealed container. To reheat, just microwave for a short time.
Most fried rice recipes say you must have cold leftover rice. If you suddenly get a craving for fried rice (like I have at times) and don't happen to have any leftover rice in the fridge, this recipe is fine with freshly made brown rice as well. If you make this recipe with freshly cooked rice, just fluff it with a fork before heating it up. The bonus of having leftover rice in the refrigerator is that this Easy Pork Fried Rice is even faster to make.

- Sesame oil gives it that authentic flavor. Once you use it , you will want sesame oil in all of your fried rice and stir fry recipes.
- Oyster sauce is a concentrated, delicious, rich, salty, and savory flavor. You don't need much but it adds a wonderful rich umami, which is a savory, tangy flavor.
Easy Pork Fried Rice variations
Even though this recipe is delicious as is, you may not have all of the ingredients on hand.
- Pork-any meat, leftover or freshly cooked will do. (my daughter makes amazing shrimp fried rice)
- Vegetables-I use frozen mixed vegetables but you can use what vegetables you have or like. Carrots, peas, mushrooms, baby corn, peppers, and celery would all work.
- Seasonings-I have also used toasted sesame seeds and fresh ginger. You could add spice in some form if you prefer added heat. If you don't like the sweetness, you could leave the brown sugar out or put less in. This is just the way my family likes it, but customize it the way you prefer!

- Rice: This recipe calls for brown rice but whatever kind you have will do. I like the chewiness and flavor of healthy brown rice! (Most chefs do not use leftover rice, they cook it fresh with a little less water)
- Ground Pork: Ground pork is super simple to fry up. It's especially yummy when you let it brown up and add the garlic salt and sugar at the end to season it.
- Frozen Mixed Vegetables: I love the Costco organic blend, which has carrots, peas, beans, and corn. Using the frozen vegetables saves a LOT of time, but, if you don't have frozen veggies, just use the vegetables of your choice. If you use raw, just cook them before adding them to the fried rice.
- Delicious Seasonings: Garlic, Sesame oil, Oyster Sauce, Soy Sauce, Brown sugar, ground ginger, or freshly grated ginger.
- Eggs: Cook these with the rice according to the directions in this recipe. It does make a difference in the creaminess, you don't want your eggs to be dry!
How to make Easy Pork Fried Rice
- First of all, cook the rice with a little less water than the package instructions. (if you don't have leftover rice)
- Then, in a large Wok or Saucepan, on medium high, add the lean ground pork and cook until browning and starting to get crispy. Add garlic salt and 2 tsp sugar to season the meat.
- When the pork is cooked, set it aside in a bowl.
- Add the sesame oil, garlic, and rice to the saucepan or wok. Stir fry until the rice is hot and you can smell the garlic starting to cook.
- Add the soy sauce, oyster sauce, brown sugar, and ginger.
- Add the frozen vegetables. Stir and cook until the vegetables are almost cooked.
- Push the rice to the sides of the pan, leaving a well in the middle.
- Add the eggs to the well and scramble fry. When the eggs have finished cooking, stir them into the rice.
- Add the pork and stir until heated well.
- Serve with extra soy sauce, green onions, or whatever you like on your fried rice.
