This recipe was given to me years ago by a friend. I use it when I'm in a pinch for time. I also choose this recipe when I want potatoes to go with a meal and don't happen to have any at the time. Deluxe and Creamy Hashbrown Casserole makes a great side dish to go with almost any kind of meat. I love the aspect that you can make it up ahead and freeze it or store it in the refrigerator until you want to cook it. If you want, this recipe can also be served with breakfast or lunch. You can add ham, bacon, or sausage for the breakfast casserole. For a lunch casserole you can add your choice of sausage, ham or bacon and serve it with a fresh salad.

Hashbrowns: Thaw before starting your recipe for easier mixing.
Cream of Mushroom Soup: For flavor and creaminess.

Cheddar Cheese: I like Sharp Cheddar for this casserole but whichever kind of cheese you prefer is fine.

Ingredients
2lb Frozen Hash Browns (thawed)
1can Cream of Mushroom Soup (condensed)
2cup Sour Cream
1/2cup Butter (melted)
1 Onion (chopped)
1/2cup Cheddar Cheese (grated)
1tsp Salt
1dash Black Pepper

Thaw the hashbrowns and melt the butter.

Place all of the ingredients in a large bowl.
Mix well.

Place the mixture in a 9x13" casserole dish.

Bake at 350°F for 1 hour.
