Well, it won’t take long to make some more. About 10 minutes of mixing and measuring, and into the oven for an hour of producing delicious smells. Then, the final reward of tasting this homemade granola.
History of Crunchy, Healthy, Quick and Easy Granola
Granola was first introduced to me by my husband’s family. When we would visit them, my mother in law would always serve bedtime snacks no matter how full we were. When Mark and I were first married, the snacks would always include Harvest Crunch as part of the bedtime snack ritual. That was where I first learned how delicious granola is when you eat it with yogurt. (It’s also delicious eaten plain or with milk)
So, a while ago, I was craving Harvest Crunch with yogurt but didn’t have any granola in the house and didn’t feel like running out to the grocery store. Voila!, I searched my cupboards and came up with this tasty and healthy granola recipe which I now love so much that I never crave Harvest Crunch any more. My absolute favorite breakfast when I am in a hurry is this Crunchy, Healthy, Quick and Easy Granola with yogurt!

About the designing of Crunchy, Healthy, Quick, and Easy Granola
This recipe was designed out of ingredients I happened to have in my cupboard. When I read all about the amazing superfood power that Chia seeds have, I bought some with good intentions. I ate them plain in water for a while but unfortunately grew tired of their slimy texture and bland flavor. (So happy to have found another use for chia seeds!) We also purchased the large container of coconut oil for its amazing health benefits.(What can I say, Costco has great prices but the size of the containers are so huge) Our family also love to buy the mixed nuts at Costco. I prefer the unsalted blend for this recipe but if you get a salted blend of nuts, you can just leave the salt out of the recipe.
Homemade granola is such an amazing diversified food. It used to be considered only eaten by hippies, tree huggers or health nuts. This is so untrue as this healthy granola recipe is such a well-loved, tasty and healthy snack for young and old alike!
This Crunchy, Healthy, Quick and Easy Granola can be eaten by itself (that’s my husbands favorite) or with yogurt and fruit for a complete meal. You can also eat it like a cereal with milk. Homemade granola can be eaten for breakfast, snacks, dessert, or bedtime snacks! You will find that this granola recipe has a staying power and you will feel full and satisfied until lunch if you eat it for breakfast. It also tastes good enough to eat for dessert but is healthy enough not to have any guilt factor with it.
Method
When you bake this healthy granola recipe at a low temperature for a long time it turns a delightful golden hue. It also develops that satisfying crunch that you must have when eating homemade granola. If you like it crunchier, just bake it for an extra 10 minutes. Every oven is different so you may have to experiment to get the perfect crunch for your taste buds. You can play around with the combination of nuts and make it exactly the way you prefer it. I also add raisins when I eat this granola. If you do like raisins in your granola, don’t add them before cooking as they will become way too hard.
Ingredients for Crunchy, Healthy, Quick and Easy Granola
- Oats, a truly healthy whole grain that is filling, and full of health benefits, including antioxidants, minerals, vitamins etc.
- Nuts, whichever blend you prefer, these are protein packed, full of Omega 3’s and 6’s and unsaturated fat.
- Coconut Oil, which is said to have many healthful properties! Plus the mild coconut flavor totally enhances this healthy granola recipe.
- Sweetener, I use brown sugar and honey, which creates a crunchy, sweet coating on the granola.
- Coconut, use small or large sized shreds.
- Chia seeds which truly are a very healthful, flavorless addition to homemade granola.
- Vanilla extract and salt, perfect flavors to compliment this healthy granola recipe.
- Raisins, or other dried fruit, added once the baking is finished.
How to make Crunchy, Helathy, Quick and Easy Granola
1.Mix the rolled oats, nuts, coconut,and chia seeds in a large bowl.
2.Put the Coconut oil in a microwavable bowl. Melt on high for 20 seconds. Then mix the honey, brown sugar, vanilla and salt into the coconut oil. Stir the coconut oil mixture into the oat mixture.
3.Put parchment paper on a large cookie sheet and spread the mixture on it.
4.Bake at 265°F for 1 hour, stirring every 15 minutes.
5.Once the granola has completely cooled, store in airtight glass containers.
Tips
- This Crunchy, Healthy, Quick and Easy Granola will keep for up to 3 weeks if stored in a sealed glass container.
- Be sure to line the baking sheet with parchment paper so that this granola recipe doesn’t stick.
- Let the granola completely cool before breaking apart.
- Add any dried fruit after baking or you will end up with rock hard fruit.
- If you do eat this granola dry, you may want to leave the chia seeds out, as there have been some reports of trouble with eating dry chia seeds. This is mainly if you have any trouble swallowing. Dry chia seeds in this small of an amount shouldn’t cause any trouble though.
