How to Make Caramel Apple Pie
1. Preheat oven to 400°F. Melt the butter in a saucepan and stir in the flour to form a paste.
2. Add water, both sugars, cinnamon and nutmeg and bring to a boil. Reduce heat and let simmer for about 5 minutes. Add the vanilla.
3. Mix the cornstarch with the apples.
4. Place the bottom crust in the pie pan. Fill the crust with the apples, mounded slightly. Brush the edges with water. Cover with a lattice pie crust. Trim the edges and pinch together.
5. Gently pour the caramel over the crust. Use a pastry brush to spread it evenly over the crust.
6. Bake for 15 minutes in the preheated oven. Reduce the temperature to 350°F and continue baking for 35-45 minutes, until done. If the edges start browning too much before it is done baking, cover lightly with aluminum or a pie crust protector.
